Truffles

Mint Truffles
30 Oreo cookies, crushed
8 oz package cream cheese
1/2 tsp mint extract
1 (12 oz) package semi-sweet chocolate chips

In a blender or food processor, crush Oreo cookies until fine.  Add cream cheese a little at a time to cookie mixture; until combined.  Add mint extract to cookies and mix well.  Shape mixture into small balls and place on cookie sheet.  Place balls into freezer for a minimum of one hour before you dip into chocolate. 

Slowly heat chocolate chips in a double boiler, or in a microwave safe bowl.  Roll balls in chocolate until covered; place on waxed or parchment paper to cool.  Store in air tight container and refrigerate until ready to serve.

Peanut Butter Truffles

16 oz package Nutterbutters cookies, crushed
8 oz package cream cheese
24 oz Chocolate almond bark

In a blender or food processor, crush Nutterbutter cookies until fine.  Add cream cheese a little at a time to cookie mixture; until combined.  Shape mixture into small balls and place on cookie sheet.  Place balls into freezer for a minimum of one hour before you dip into chocolate. 

Slowly heat almond bark in a double boiler, or in a microwave safe bowl.  Roll balls in chocolate until covered; place on waxed or parchment paper to cool.  Store in air tight container and refrigerate until ready to serve.

Lemon Truffles

16 oz package lemon sandwich cookies, crushed
8 oz package cream cheese
24 oz White Chocolate almond bark

In a blender or food processor, crush lemon cookies until fine.  Add cream cheese a little at a time to cookie mixture; until combined.  Shape mixture into small balls and place on cookie sheet.  Place balls into freezer for a minimum of one hour before you dip into white chocolate. 

Slowly heat almond bark in a double boiler, or in a microwave safe bowl.  Roll balls in white chocolate until covered; place on waxed or parchment paper to cool.  Store in air tight container and refrigerate until ready to serve.

Oreo Truffles
